Mediterranean Chicken Potato Rolls
Ingredients:
2 cups mashed potatoes (lightly seasoned with olive oil, salt, pepper)
1 cup shredded cooked chicken breast
1/2 cup crumbled feta cheese or shredded mozzarella
1/4 cup chopped sun-dried tomatoes
1/4 cup chopped fresh parsley or baby spinach
1/2 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp paprika or Aleppo pepper
Salt and pepper to taste
1–2 eggs (for binding)
1/4 cup breadcrumbs (optional, for structure)
Olive oil for brushing
Grated cheese for topping (optional, like kasseri or mozzarella)

Instructions:
Step 1: Preheat oven
Preheat to 375°F (190°C). Line a baking tray with parchment paper.
Step 2: Make the filling
In a large bowl, combine mashed potatoes, chicken, feta, sun-dried tomatoes, herbs, spices, and egg. Mix until fully combined. If it’s too soft, add breadcrumbs for firmness.
Step 3: Shape the rolls
Scoop out some of the mixture and shape into rectangular or cylindrical rolls. Place them on the baking tray.
Step 4: Top and bake
Brush the tops with olive oil and sprinkle with grated cheese if using. Bake for 25–30 minutes until golden and slightly crispy.
Step 5: Serve
Let cool slightly before serving. Great with a side of tzatziki, garlic yogurt, or a light cucumber-tomato salad.
