Mediterranean Chicken Bake
A vibrant and flavorful dish that brings the essence of the Mediterranean to your table, featuring tender chicken breasts baked with fresh vegetables, olives, and feta cheese.
Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoons dried oregano
2 teaspoons garlic powder
Salt and pepper to taste
1 cup cherry tomatoes, halved
1 zucchini, sliced
1 red onion, sliced
1 bell pepper, sliced
1/4 cup Kalamata olives, pitted and halved
1/4 cup feta cheese, crumbled
Fresh parsley for garnish
Directions:
Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
Prepare the Chicken: In a large bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add the chicken breasts and coat them evenly with the marinade.
Arrange the Vegetables: Place the marinated chicken breasts in the baking dish. Surround them with cherry tomatoes, zucchini, red onion, bell pepper, and Kalamata olives.
Add the Feta Cheese: Sprinkle the crumbled feta cheese over the top of the chicken and vegetables.
Bake the Dish: Cover the baking dish with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
