Mediterranean Breakfast Sandwich  

Ingredients:

  • – 2 slices of whole-grain bread
  • – 2 large eggs
  • – 1/4 cup crumbled feta cheese
  • – 1/2 cup fresh spinach leaves
  • – 1/4 cup sliced cherry tomatoes
  • – 1 tablespoon olive oil
  • – 1 teaspoon dried oregano
  • – Salt and pepper to taste
  • – 1 tablespoon hummus (optional)

 

Instructions:

1. Heat olive oil in a non-stick skillet over medium heat.

2. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt, pepper, and dried oregano.

3. While the eggs are cooking, toast the whole-grain bread slices until golden brown.

4. Spread hummus on one side of each slice of toast if using.

5. Layer fresh spinach leaves, sliced cherry tomatoes, and crumbled feta cheese on one slice of the toasted bread.

6. Once the eggs are cooked, carefully place them on top of the feta cheese.

7. Top with the second slice of bread to complete the sandwich.

8. Cut in half and serve warm.
