Mediterranean Avocado Toast with Feta, Cherry Tomatoes, Cranberries & Walnuts
Ingredients:
- 2 ripe avocados – halved, pitted, and sliced or mashed
- 2–4 slices sourdough bread – toasted
- 1 cup cherry tomatoes – halved
- 1/2 cup feta cheese – crumbled (preferably marinated in olive oil)
- 1/4 cup dried cranberries – chopped
- 1/4 cup walnuts – lightly toasted and chopped
- 1–2 tsp lemon juice – fresh
- Salt and freshly ground black pepper – to taste
- Extra virgin olive oil – for drizzlin
- Fresh herbs (parsley, mint, or basil) – for garnish
- Optional: poached eggs (for protein)
- Optional: balsamic glaze or honey (for a sweet-tangy finish)

Instructions:
1️⃣ Prep the Avocado:
Scoop the avocado into a bowl and mash to your preferred consistency, or slice it for a more rustic look.
Add lemon juice, a drizzle of olive oil, salt, and pepper. Mix gently.
2️⃣ Toast the Bread:
Toast the sourdough slices until golden and crisp on the outside, soft on the inside.
3️⃣ Assemble the Toast:
Spread the mashed (or layer the sliced) avocado generously over each toast slice.
Top with halved cherry tomatoes, crumbled feta, chopped cranberries, and toasted walnuts.
4️⃣ Add the Finishing Touches:
Sprinkle extra salt and pepper to taste.
Drizzle with a little extra virgin olive oil and, optionally, balsamic glaze or honey.
Top with a poached egg if desired.
5️⃣ Garnish and Serve:
Add fresh herbs like parsley, mint, or basil for a Mediterranean flair.
Serve immediately—best enjoyed warm and fresh!
