Mediterranean Apple Cranberry Carrot Salad
Ingredients:
For the Salad:
- 1 large apple (crisp variety like Fuji or Honeycrisp), julienned or grated
- 1 large carrot, peeled and shredded
- 1/4 cup dried cranberries (preferably unsweetened or sweetened with apple juice)
- 2 tablespoons chopped fresh parsley or mint
- 1 tablespoon toasted pine nuts or chopped walnuts (optional but adds a great Mediterranean touch)
- 1 tablespoon crumbled feta cheese (optional for extra flavor)
For the Dressing:
- 1 tablespoon extra virgin olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey or pure maple syrup
- A pinch of sea salt
- Freshly ground black pepper to taste
- Optional: a small squeeze of lemon juice (for added brightness)
Instructions:
1. Prepare the produce:
Julienne or grate the apple and carrot. Place them in a medium bowl. Add dried cranberries, fresh parsley or mint, and nuts if using.
2. Make the dressing:
In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey or maple syrup, salt, pepper, and lemon juice (if using).
3. Combine:
Pour the dressing over the salad and toss until everything is well coated.
4. Garnish (Optional):
Sprinkle crumbled feta cheese on top before serving for a creamy, tangy finish.
5. Serve:
Serve immediately or chill for 15–30 minutes for a more infused flavor.
