Meatloaf Cupcakes with Whipped Potato Topping


Ingredients

  • 1 lb. ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup ketchup
  • 1/4 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 cups mashed potatoes, whipped until creamy
  • Chopped chives for garnish

 


Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix together the ground beef, breadcrumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper.
  • Press the meat mixture into muffin tins, filling each cup to the top.
  • Bake for about 20-25 minutes, or until the meatloaf is cooked through.
  • While the meatloafs bake, whip the mashed potatoes until they’re light and fluffy.
  • Once the meatloafs are done, let them cool slightly and then remove them from the tins.
  • Pipe the whipped potatoes on top of each meatloaf cupcake using a piping bag with a star tip.
  • Garnish with chopped chives and serve warm.

  • Cook Time: 25 minutes
