Instructions

Prepare the vegetables
Slice cucumbers into rounds, chop tomatoes into bite-sized pieces, and thinly slice the onion. If desired, soak onion slices in cold water for 10 minutes to reduce sharpness, then drain well. -
Make the marinade
In a medium bowl or measuring cup, whisk together vinegar, olive oil, sugar, salt, black pepper, and garlic powder until sugar dissolves. -
Combine
Place cucumbers, tomatoes, and onions in a large mixing bowl. Pour the marinade over and toss gently until well coated. -
Chill and marinate
