Ingredients

  • 2 large cucumbers, sliced (peeled if preferred)

  • ½ cup white vinegar

  • ¼ cup olive oil

  • 2 tablespoons sugar

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¼ teaspoon garlic powder

  • 1 tablespoon fresh parsley, chopped (optional, for garnish)


Instructions

  1. Prepare the vegetables
    Slice cucumbers into rounds, chop tomatoes into bite-sized pieces, and thinly slice the onion. If desired, soak onion slices in cold water for 10 minutes to reduce sharpness, then drain well.

  2. Make the marinade
    In a medium bowl or measuring cup, whisk together vinegar, olive oil, sugar, salt, black pepper, and garlic powder until sugar dissolves.
