Ingredients:

1 low-carb tortilla (whole wheat or almond flour-based)

1/2 cup lean ground beef (95% lean or ground turkey for lighter option)

1/4 cup shredded low-fat cheese (cheddar, mozzarella, or Mexican blend)

2 tbsp diced onions & peppers (bell peppers or jalapeños for spice)

1 tsp chili powder

1/2 tsp ground cumin

1/4 tsp garlic powder

Salt & black pepper to taste

Nonstick spray or 1 tsp olive oil
Instructions:

Cook the beef filling

Heat a small skillet over medium heat.

Add lean ground beef (or turkey) and cook until browned (5–7 minutes).

Drain any excess fat if needed.

Stir in onions, peppers, chili powder, cumin, garlic powder, salt, and pepper. Cook for another 2–3 minutes until veggies soften.

Lay your low-carb tortilla flat.

Sprinkle half the cheese over one side, then spoon the beef mixture on top.

Add the rest of the cheese and fold tortilla in half.

Lightly coat a skillet with nonstick spray or a little olive oil.

Place the folded tortilla in skillet over medium-low heat.
