Low-Carb Beef Quesadillas (Diabetic-Friendly)

Ingredients:

  • 1 low-carb tortilla (whole wheat or almond flour-based)

  • 1/2 cup lean ground beef (95% lean or ground turkey for lighter option)

  • 1/4 cup shredded low-fat cheese (cheddar, mozzarella, or Mexican blend)

  • 2 tbsp diced onions & peppers (bell peppers or jalapeños for spice)

  • 1 tsp chili powder

  • 1/2 tsp ground cumin

  • 1/4 tsp garlic powder

  • Salt & black pepper to taste

  • Nonstick spray or 1 tsp olive oil


Instructions:

  1. Cook the beef filling

    • Heat a small skillet over medium heat.

    • Add lean ground beef (or turkey) and cook until browned (5–7 minutes).

    • Drain any excess fat if needed.

    • Stir in onions, peppers, chili powder, cumin, garlic powder, salt, and pepper. Cook for another 2–3 minutes until veggies soften.

  2. Assemble the quesadilla

    • Lay your low-carb tortilla flat.

    • Sprinkle half the cheese over one side, then spoon the beef mixture on top.

    • Add the rest of the cheese and fold tortilla in half.

  3. Cook the quesadilla

    • Lightly coat a skillet with nonstick spray or a little olive oil.

    • Place the folded tortilla in skillet over medium-low heat.

    • Cook 2–3 minutes per side until golden brown and cheese is melted.

  4. Slice & Serve

    • Remove from skillet, let cool slightly, then slice into wedges.

    • Serve with sugar-free salsa, Greek yogurt, or guacamole.
