Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
For the Parmesan Crust:
1/2 cup grated Parmesan cheese
1/4 cup panko breadcrumbs
2 tablespoons butter, melted
1/2 cup shredded provolone cheese (or mozzarella for a milder taste)
Fresh parsley, chopped, for garnish
Instructions
Prepare the Chicken:
Preheat your oven to 400°F (200°C).
Season the chicken breasts with salt, pepper, smoked paprika, garlic powder, and onion powder on both sides.
Sear the Chicken:
Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side, until golden brown. Remove from heat but keep the chicken in the skillet.
Prepare the Parmesan Crust:
In a small bowl, combine the grated Parmesan cheese, panko breadcrumbs, and melted butter until well-mixed.
Assemble the Parmesan Chicken:
Sprinkle the shredded provolone cheese evenly over each chicken breast in the skillet. Top each piece with a generous spoonful of the Parmesan and breadcrumb mixture, pressing it down slightly.
Bake to Perfection:
Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the Parmesan crust is golden and bubbly.
Garnish and Serve:
Remove the skillet from the oven, garnish with freshly chopped parsley, and serve hot.
