Long Fries Recipe
Ingredients
- 2 medium potatoes (about 300 g), peeled & boiled
- ½ cup all-purpose flour (60 g)
- 2 tbsp cornstarch
- ½ tsp baking powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder (optional)
- ¼ cup milk (or water, adjust as needed)
- Oil, for deep frying
For Serving
- Ketchup, mayo, or cheese sauce
- Sprinkle of paprika, oregano, or parmesan (optional)
Instructions
1. Prepare the Dough
- Mash boiled potatoes until smooth (no lumps).
- In a bowl, combine mashed potatoes, flour, cornstarch, baking powder, salt, and seasonings.
- Add milk little by little until you get a thick but pipeable batter.
2. Shape the Long Fries
- Transfer the dough into a piping bag fitted with a wide star nozzle (or cut the tip for smooth fries).
- Pipe long strips directly onto a tray lined with parchment paper.
- Tip: If you want them extra straight, pipe onto parchment, freeze for 30 minutes, then fry.
3. Fry the Fries
- Heat oil in a deep pan to 350°F (175°C).
- Fry the long fries in batches until golden and crispy (about 3–4 minutes).
- Drain on paper towels.
4. Serve
- Sprinkle with seasoning or cheese, and serve hot with dips.
- You can even serve them on skewers for a street-food style look!
Variations
- Cheesy Long Fries → Add 2 tbsp grated cheese into the dough.
- Spicy Long Fries → Add chili flakes or paprika for heat.
- Baked/Air-fried version → Pipe onto parchment and bake at 400°F (200°C) for 15–18 minutes or air fry at 390°F (200°C) for 12–14 minutes.
