Lemon Herb Chicken with Roasted Carrots & Parmesan Broccoli

Ingredients:
For the Lemon Herb Chicken:
- 2 boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 2 lemon slices
For the Roasted Carrots:
- 1 cup baby carrots
- 1 tbsp honey
- 1 tbsp butter, melted
- ½ tsp paprika
- ½ tsp salt
- For the Parmesan Broccoli:
- 1½ cups broccoli florets
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
️ Step by Step:
1️⃣ Marinate & Cook the Chicken:
In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
Coat the chicken and let it marinate for at least 15 minutes.
Heat a grill or pan over medium heat and cook for 5-7 minutes per side.
Add lemon slices on top and cook for another minute until slightly charred.
2️⃣ Roast the Carrots:
Preheat the oven to 400°F (200°C).
Toss baby carrots with melted butter, honey, paprika, and salt.
Spread on a baking sheet and roast for 20-25 minutes, stirring halfway.
3️⃣ Prepare the Parmesan Broccoli:
Toss broccoli florets with olive oil, garlic powder, salt, and pepper.
Spread on a baking sheet and bake at 400°F (200°C) for 15 minutes.
Sprinkle Parmesan cheese on top and bake for another 5 minutes until golden.
4️⃣ Serve & Enjoy:
Arrange everything on a plate and enjoy a delicious, balanced meal!
