1 whole chicken (cut into 8–10 pieces)

3 eggs (beaten)

2 cups all-purpose flour

4 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp dried thyme

1 tsp dried basil

1 tsp dried oregano
-
1 tsp celery salt (or regular salt)

1 tsp black pepper
-
½ tsp white pepper
-
½ tsp ground ginger

½ tsp mustard powder

Oil for deep frying
Instructions

Prepare the chicken

Wash and pat dry chicken pieces.

Season lightly with salt and pepper.

Mix the coating

In a large bowl, mix flour with paprika, garlic powder, onion powder, thyme, basil, oregano, celery salt, black pepper, white pepper, ground ginger, and mustard powder.

Egg wash

In a separate bowl, beat the eggs.

Coat the chicken

Dip each chicken piece in the flour mixture → egg wash → flour mixture again (double coating for extra crispiness).

Place coated chicken on a tray and let rest 10 minutes (helps coating stick).

Fry the chicken

Heat oil in a deep fryer or heavy pot to 170–175°C (340–350°F).

Fry chicken pieces in small batches for 12–15 minutes, turning occasionally, until golden brown and cooked through (internal temp 75°C/165°F).

Drain & Serve

Remove chicken, drain on a wire rack or paper towels.

Serve hot with fries, coleslaw, or biscuits — just like KFC!
