Ingredients:
- 1 cup (tea) of water
- ½ cup (tea) of oat flour
- Salt to taste
- 1 dash of olive oil
- 1 chopped tomato
- 2 eggs
- 1 cup (tea) of fried and shredded chicken breast
Preparation method:
In a bowl, mix the water, oat flour and salt, beating well with a mixer until a homogeneous dough forms.
Heat a frying pan over low/medium heat, add a drizzle of olive oil and spread well.
Add a small portion of the batter and cook until golden brown on both sides, forming a pancake. Repeat the process until the batter is gone, then set aside.
In the same frying pan, add a drizzle of olive oil and add the chopped tomatoes, beaten eggs and shredded chicken.
