Juicy Baked Chicken with Roasted Veggies
A simple, flavorful, and healthy meal in just one pan!
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
For the Roasted Veggies:
- 1 cup Brussels sprouts (halved)
- 1 cup yellow squash (chopped)
- 1 red bell pepper (chopped)
- 1/2 red onion (sliced)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

️ Step by Step:
1️⃣ Preheat & Prep:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2️⃣ Season the Chicken:
Mix olive oil, garlic powder, paprika, onion powder, Italian seasoning, Dijon mustard, and lemon juice.
Rub the seasoning mixture onto the chicken breasts.
3️⃣ Prepare the Vegetables:
Toss Brussels sprouts, squash, bell pepper, and onion with olive oil, salt, pepper, and garlic powder. Spread evenly on the baking sheet.
4️⃣ Bake everything together:
Place chicken on the baking sheet with the veggies. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
