Jalebi Recipe

Ingredients

For the batter:

  • 1 cup all-purpose flour (maida)
  • 2 tbsp cornflour
  • 1/2 cup yogurt (curd)
  • 1/2 tsp baking powder
  • 1 tbsp ghee (clarified butter)
  • 1/2 cup water
  • A pinch of yellow/orange food color (optional)
  • 1/2 tsp cardamom powder (for flavor)

For the sugar syrup:

  • 1 cup sugar
  • 1/2 cup water
  • 1/4 tsp saffron strands (optional)
  • 1/2 tsp cardamom powder
  • 1/2 tsp lemon juice

For frying:

  • Ghee or oil (for deep frying)

Instructions

Step 1: Make the batter

  1. In a bowl, mix all-purpose flour, cornflour, and baking powder.
  2. Add yogurt, ghee, food color, and water. Whisk well to make a smooth batter (should be thick but pourable).
  3. Cover and let it ferment for 8-10 hours or overnight.

Step 2: Prepare sugar syrup

  1. In a pan, add sugar and water. Heat until it forms a one-string consistency (sticky but not too thick).
  2. Add lemon juice, cardamom powder, and saffron strands. Keep warm.

Step 3: Fry the Jalebi

  1. Heat ghee/oil in a pan on medium flame.
  2. Pour batter into a piping bag or a squeeze bottle.
  3. Pipe spirals into the hot oil. Fry until golden and crispy.

Step 4: Soak and Serve

  1. Immediately dip the fried jalebis into warm sugar syrup for 30 seconds.
  2. Remove and serve hot with rabri or milk!

Tips for Perfect Jalebi

✔️ Fermentation is key for a tangy taste.
✔️ Keep the batter slightly thick for crispy texture.
✔️ Sugar syrup should be warm, not too thick or too thin.
✔️ Always fry on medium heat for even cooking.
