Ingredients:
- 3 eggs
- 1 box of cream
- 100g of white or black raisins (can be replaced with dried plums)
- 1 apple or 2 very ripe bananas
- 120 g rolled oats
- 110g of cornstarch (Maizena type) or grated coconut
- 1 tablespoon of baking powder (Royal type)
Tip: If you cannot consume lactose, replace the cream with 200 ml of coconut milk.

Preparation method:
Place the raisins in a pot of boiling water and let them steep for 10 minutes. Then drain the water.
In a blender, combine the eggs, heavy cream, soaked raisins, and apple (peeled and seeded) or banana. Blend for about 1 minute until smooth.
Add the oats and cornstarch and blend again until well combined. Add the yeast and blend quickly using the blender’s pulse function.
Grease a pan with oil and pour in the batter. Bake in a preheated oven at 200°C for approximately 40 minutes.
To brown the surface better, increase the temperature to 250°C in the last 10 minutes or use the oven’s browning function.
Remove from the oven, let cool for a few minutes, and then unmold. For an extra touch of flavor, sprinkle with cinnamon to taste.
