Ingredients:

  • 900g of English potatoes (small potatoes) – opt for larger potatoes
  • 250g freshly grated Parmesan cheese
  • 1 chopped onion
  • Salt and black pepper to taste
  • Vegetable oil or olive oil

Preparation method:

Peel the potatoes and cook them whole until soft, but without falling apart, as they will be grated later.

Heat a drizzle of oil in a skillet and sauté the onion until softened. Set aside in a separate container.

Then, grate the potatoes on the medium side of the grater and place them in the same pan where the onion was sautéed, using the remaining fat.

Season with salt and black pepper to taste, add the browned onion and grated Parmesan cheese.

Mix well until the ingredients are well incorporated, forming a smooth dough. Remove and set aside.

Heat a little more oil in the skillet, add the mixture, and smooth the surface, shaping it to make it uniform. Fry until golden brown on both sides.
