Homemade Stuffed Chicken Cordon Bleu

Ingredients:
4 very thin chicken cutlets
4 slices of cooked or smoked ham
4 slices of cheese (Emmental, Comté, or mozzarella)
1 tbsp chopped parsley
Salt, pepper
For the coating:
Flour
2 beaten eggs
Breadcrumbs
Cooking oil (sunflower or rapeseed)
Preparation steps:
Prepare the cutlets ![]()
Flatten the cutlets well between two sheets of baking paper using a rolling pin to make them very thin. Season with salt and pepper.
Fill and roll ![]()

Place a slice of ham, a slice of cheese, and a little chopped parsley on each cutlet. Roll tightly like a Swiss roll, then secure with toothpicks or tie them with string if necessary.
Bread the rolls ![]()
Coat each roll in flour, then in beaten eggs, then in breadcrumbs. Press lightly to ensure they adhere well.
Cooking ![]()
Heat the oil in a frying pan. Brown the rolls on all sides over medium heat for 8 to 10 minutes. Finish cooking in the oven at 180°C for 10-15 minutes until the inside is nice and hot and the cheese is melted.

Let rest for 2 minutes, then slice diagonally for a beautiful presentation. Serve with a green salad, grilled vegetables, or homemade fries.
Time-saving tip:
Prepare the rolls in advance and store them in the refrigerator before baking. You can even freeze them raw (already breaded).
Ingredient swap:
No ham? Replace it with coppa or spinach for a lighter version.

For a crispy but not too greasy result, start in a pan for color, then finish cooking in a fan-assisted oven.
