Grilled Chicken Skewers with Homemade Tzatziki Dip

Ingredients (Serves 4–6)
For the Chicken Skewers:

1.5 lbs (700g) boneless chicken breast or thighs

3 tbsp olive oil

3 tbsp lemon juice

3 cloves garlic, minced

1 tsp paprika

For the Tzatziki Dip:

1 cup (250g) Greek yogurt

½ cucumber, grated and excess water squeezed out

2 cloves garlic, finely minced

2 tbsp olive oil

1 tbsp lemon juice

1 tbsp fresh dill (or mint), finely chopped

Salt & pepper, to taste
Instructions
Step 1: Marinate the Chicken

Cut chicken into bite-sized cubes.

In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper.

Add chicken and coat well.

Cover and marinate in the fridge for at least 1 hour (up to overnight for best flavor).
Step 2: Prepare the Tzatziki Dip

Grate cucumber, squeeze out liquid using a clean towel.

In a bowl, combine Greek yogurt, cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper.

Mix well, cover, and chill until serving.
Step 3: Grill the Chicken

Preheat grill or grill pan to medium-high heat.
