Homemade Crawfish Pizza
Ingredients (Serves 4)For the Pizza Dough:
2 1/4 tsp active dry yeast (1 packet)
1 1/3 cups warm water (110°F/45°C)
3 1/2 cups all-purpose flour
2 tbsp olive oil
2 tsp sugar
1 tsp salt

For the Crawfish Topping:1 lb (450g) crawfish tails, peeled and deveined
1 tbsp olive oil
1 tsp Cajun seasoning
1/2 tsp garlic powder
1/4 tsp cayenne pepper (optional, for extra heat)
1/4 tsp salt
1/4 tsp black pepper

For the Pizza:1 cup pizza sauce (or marinara sauce)
2 cups (200g) shredded mozzarella cheese
1/2 cup red onion, thinly sliced (optional)
1/4 cup fresh parsley or green onions, chopped (for garnish)

1 tsp dried oregano or Italian seasoning
Instructions
1. Prepare the Pizza Dough:In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes until foamy.
In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil, mixing until a dough forms.
Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

2. Prepare the Crawfish:In a medium bowl, toss the crawfish tails with olive oil, Cajun seasoning, garlic powder, cayenne pepper (if using), salt, and black pepper.
Heat a skillet over medium heat. Add the seasoned crawfish and cook for 2-3 minutes until just cooked through. Set aside.

3. Preheat the Oven:Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

4. Assemble the Pizza:Punch down the dough and roll it out on a floured surface into a 12-14 inch circle.
Transfer the dough to a pizza pan or preheated pizza stone.
Spread the pizza sauce evenly over the dough, leaving a 1-inch border.
Sprinkle half of the mozzarella cheese over the sauce. Evenly distribute the cooked crawfish tails and red onion (if using) over the cheese. Top with the remaining mozzarella and a sprinkle of oregano or Italian seasoning.

5. Bake:Bake the pizza for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

6. Serve:Remove the pizza from the oven and let it cool for 2-3 minutes.
Garnish with chopped parsley or green onions. Slice and serve hot.

NotesFor a spicier pizza, add a few dashes of hot sauce to the pizza sauce or increase the cayenne in the crawfish seasoning.
You can substitute crawfish with shrimp if crawfish is unavailable.
