Homemade Banana Cookies!

Ingredients:
1. 2 ripe bananas, mashed
2. 1 cup all-purpose flour
3. 1/2 cup rolled oats
4. 1/2 cup brown sugar
5. 1/4 cup granulated sugar
6. 1/2 teaspoon baking powder
7. 1/2 teaspoon salt
8. 1/4 teaspoon ground cinnamon (optional)
9. 1/4 cup unsalted butter, softened
10. 1 large egg
11. 1 teaspoon vanilla extract
12. Optional: chopped nuts or chocolate chips

## Instructions:
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together flour, oats, brown sugar, granulated sugar, baking powder, salt, and cinnamon (if using).
3. In a separate bowl, mix mashed bananas, softened butter, egg, and vanilla extract.
4. Combine wet and dry ingredients. If using nuts or chocolate chips, fold them in.
5. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
6. Bake for 12-15 minutes or until lightly golden.
7. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

## Tips:
– Use very ripe bananas for the best flavor.
– If you want a chewier cookie, bake for 10-12 minutes. For a crisper cookie, bake for 15-18 minutes.
– You can customize the recipe by adding different mix-ins, like dried cranberries or coconut flakes.
