Herb-Roasted Turkey Breast with Pomegranate Glaze
Ingredients
- 2 lb turkey breast (skin on)
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp chopped rosemary
- 1 tsp chopped thyme
Glaze:
- ½ cup pomegranate juice
- 2 tbsp honey or maple syrup
- 1 tsp balsamic vinegar
- 1 tsp cornstarch + 1 tsp water
Quick Instructions
1. Preheat oven to 375°F (190°C).
2. Season turkey with oil, herbs, salt, and pepper.
3. Roast on a rack for 40–45 mins (internal temp 165°F / 74°C).
4. Make glaze: Simmer juice, honey, vinegar for 8–10 mins. Add cornstarch mix, cook 1–2 mins.
5. Glaze turkey in last 10 mins of roasting.
6. Rest 10 mins, then slice and drizzle with extra glaze.
