Herb-Roasted Baby Potatoes with Garlic Yogurt Sauce
Ingredients:
- 500 g baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and black pepper, to taste
Garlic Yogurt Sauce:
- 1/2 cup Greek yogurt
- 1 clove garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper, to taste
Directions:
Preheat oven to 400°F (200°C). Toss halved baby potatoes with olive oil, rosemary, thyme, salt, and pepper. Spread on a baking sheet in a single layer. Roast for 25–30 minutes, until golden and tender, flipping halfway through.
Meanwhile, mix Greek yogurt, garlic, lemon juice, salt, and pepper in a small bowl.
Serve roasted potatoes drizzled with garlic yogurt sauce.
