Healthy Zucchini & Chia Pizza Crust
Ingredients:
– 1 medium zucchini, grated (about 2 cups / 250g)
– 2 tbsp chia seeds
– 3 tbsp water
– 1/2 cup almond flour (60g)
– 1/2 cup shredded mozzarella (optional)
– 1 egg (or flax egg for vegan option)
– 1/2 tsp garlic powder
– 1/2 tsp dried oregano
– 1/2 tsp sea salt
Directions:
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Mix chia seeds with water and let sit for 10 minutes to form a gel.
3. Squeeze out excess water from grated zucchini.
4. Mix zucchini with chia gel, almond flour, cheese (if using), egg, and spices.
5. Spread onto the baking sheet, forming a thin crust.
6. Bake for 20 minutes until golden. Add toppings and bake for another 10 minutes.
