Ingredients:

2 cups / 300g blueberries (fresh or frozen)

3 tbsp / 36g chia seeds

¼ cup / 60ml water

1 tbsp / 15ml lemon juice

Optional: pinch of cinnamon or a drop of vanilla extract
Directions:

Cook the Blueberries

In a medium saucepan, combine blueberries, water, and lemon juice.

Bring to a simmer over medium heat and cook for 5–8 minutes, stirring occasionally, until the blueberries burst and release their juices.

Mash some of the berries with a fork for your preferred texture.

Add Chia Seeds

Remove the saucepan from the heat.

Stir in chia seeds (plus cinnamon or vanilla, if using).

Mix well.

Thicken the Jam

Let the mixture sit for 15–20 minutes, stirring a couple of times.

The jam will thicken as the chia seeds gel and will continue to firm up as it cools.

Taste & Adjust

If your blueberries are very tart, add a touch of stevia or monk fruit sweetener (optional).

Once cooled, transfer to a clean jar with a tight-fitting lid.

Refrigerate for up to 2 weeks.
