Healthy Cookies (No Flour, No Sugar)
Ingredients (makes ~12 cookies):
  • 2 large ripe bananas (mashed)
  • 2 cups rolled oats (gluten-free if needed)
  • ½ cup unsweetened applesauce (or 1 more banana)
  • ¼ cup natural almond butter or tahini
  • 2 tbsp extra virgin olive oil (or coconut oil)
  • ½ cup nuts or seeds (walnuts, pistachios, or sunflower seeds)
  • ½ cup dried fruit (chopped dates, figs, or raisins)
  • 1 tsp cinnamon
  • ½ tsp vanilla extract
  • Pinch of salt
Instructions:
  • Preheat oven – 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix wet ingredients – In a bowl, mash bananas. Stir in applesauce, almond butter, olive oil, and vanilla.
  • Add dry ingredients – Mix in oats, nuts, dried fruit, cinnamon, and salt until a thick dough forms.
  • Shape cookies – Scoop spoonfuls of dough, flatten slightly, and place on baking sheet.
  • Bake – 15–18 minutes, until golden and set.
  • Cool & enjoy – Let cool before serving (they firm up as they cool).
