Healthy Cookies (No Flour, No Sugar)
Ingredients (makes ~12 cookies):

2 large ripe bananas (mashed)

2 cups rolled oats (gluten-free if needed)

½ cup unsweetened applesauce (or 1 more banana)

¼ cup natural almond butter or tahini

2 tbsp extra virgin olive oil (or coconut oil)

½ cup nuts or seeds (walnuts, pistachios, or sunflower seeds)

½ cup dried fruit (chopped dates, figs, or raisins)

1 tsp cinnamon

½ tsp vanilla extract
-
Pinch of salt
Instructions:

Preheat oven – 350°F (175°C). Line a baking sheet with parchment paper.

Mix wet ingredients – In a bowl, mash bananas. Stir in applesauce, almond butter, olive oil, and vanilla.

Add dry ingredients – Mix in oats, nuts, dried fruit, cinnamon, and salt until a thick dough forms.

Shape cookies – Scoop spoonfuls of dough, flatten slightly, and place on baking sheet.

Bake – 15–18 minutes, until golden and set.

Cool & enjoy – Let cool before serving (they firm up as they cool).
