Halloumi Orzo Bowl with Roasted Veg and Herby Yogurt Sauce.
Ingredients :
- – 1 cup orzo pasta
- – 1 red bell pepper, chopped
- – 1 yellow bell pepper, chopped
- – 1 zucchini, chopped
- – 1 red onion, chopped
- – 4 oz halloumi cheese, cubed
- – 1/4 cup olive oil
- – 1 tsp dried oregano
- – 1/2 tsp garlic powder
- – Salt and pepper to taste
- – 1 cup plain Greek yogurt
- – 2 tbsp chopped fresh parsley
- – 2 tbsp chopped fresh dill
- – 1 tbsp lemon juice
- – 1 clove garlic, minced
Directions :
1. Preheat oven to 400°F (200°C). Toss bell peppers, zucchini, red onion, and halloumi with olive oil, oregano, garlic powder, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until vegetables are tender and slightly charred.
2. While vegetables are roasting, cook orzo according to package directions. Drain and set aside.
3. In a small bowl, whisk together Greek yogurt, parsley, dill, lemon juice, and minced garlic. Season with salt and pepper to taste.
4. Divide cooked orzo among bowls. Top with roasted vegetables and halloumi. Drizzle with herby yogurt sauce.
