Gulab Jamun with Rose-Infused Sugar Syrup
Soft, melt-in-your-mouth gulab jamuns soaked in fragrant sugar syrup—this classic Indian dessert is perfect for any celebration or sweet craving.
Step 1: Make the Sugar Syrup
Ingredients:
-
1 cup sugar
-
¾ cup water
-
3–4 cardamom pods, crushed
-
Few strands of saffron
-
½ tsp lemon juice
-
1–2 tsp rose syrup
Instructions:
-
In a saucepan over medium heat, combine sugar and water. Stir until the sugar fully dissolves.
-
Add crushed cardamom, saffron, and lemon juice. Stir and let it simmer for 5–6 minutes until slightly thick and sticky.
-
To test, cool a few drops of syrup and rub between your fingers—it should feel sticky like honey (no thread consistency needed).
-
Turn off the heat and stir in rose syrup. Set aside and keep warm.
Step 2: Prepare the Gulab Jamun Dough
Ingredients:
-
1 cup milk powder
-
¼ cup refined flour (maida)
-
½ tsp baking powder
-
1 tbsp ghee (clarified butter)
-
About ¼ cup milk, as needed
Instructions:
-
In a mixing bowl, combine milk powder, flour, and baking powder.
-
Add ghee and mix until crumbly and well combined.
-
Gradually add milk to form a soft, smooth dough. Do not over-knead.
-
Divide dough into small portions and roll into smooth balls. Ensure there are no cracks to prevent breaking during frying.
Step 3: Fry the Gulab Jamuns
-
Heat oil or ghee in a deep pan over medium-low heat.
-
Gently slide in the jamuns and fry, stirring gently and constantly for 6–7 minutes or until golden brown on all sides.
-
Remove and immediately transfer the fried jamuns into the warm sugar syrup.
Step 4: Soak and Serve
-
Let the jamuns soak in the sugar syrup for 2–3 hours until they double in size and become soft and juicy.
-
Serve warm or chilled, garnished with slivered pistachios or rose petals if desired.
