Grilled Salmon with Roasted Potatoes & Fresh Greens
Ingredients:
- 1 (150-200g) salmon fillet
- 1 tbsp olive oil (divided)
- Salt & black pepper to taste
- 2 small potatoes, halved
- 1/2 cup mixed greens (lettuce, spinach)
- 3-4 cherry tomatoes, halved
- 1 tbsp balsamic glaze
- 1 lemon slice for garnish
Instructions:
Prep Potatoes: Preheat oven/grill to 200°C (400°F). Toss potato halves with 1/2 tbsp olive oil, salt, & pepper. Roast or grill for 20-25 mins until tender & golden.
Prep Salmon: While potatoes cook, season salmon with salt, pepper, & remaining 1/2 tbsp olive oil.
Grill Salmon: Heat a grill pan or outdoor grill to medium-high. Grill salmon for 4-6 mins per side, or until cooked through with grill marks.
Assemble Salad: In a small bowl, combine mixed greens & cherry tomatoes.
Plate: On a plate, arrange the grilled salmon, roasted potatoes, and salad.
Finish: Drizzle balsamic glaze over the salmon & potatoes. Garnish with a lemon slice. Serve immediately!
