Grilled Halloumi Plate (2 servings)

 

Ingredients:

  • 200g halloumi, sliced
  • 1 cup basmati rice + 2 cups water + salt
  • 1 zucchini, sliced
  • ½ cup Greek yogurt
  • ¼ cucumber, grated & squeezed
  • 1 garlic clove, minced
  • 1 tsp lemon juice, 2 tsp olive oil
  • Spices: paprika, garlic powder, oregano, dill, salt, pepper

Steps:

1. Cook rice with water + salt.

2. Grill halloumi (with oil, paprika, garlic powder).

3. Grill zucchini (with oil, oregano, salt & pepper).

4. Mix tzatziki: yogurt, cucumber, garlic, lemon, oil, dill, salt & pepper.

5. Serve all together. Garnish with parsley & lemon if you like.

You can also increase the amount of ingredients, if the number of persons are more then 2
