Grilled chicken avocado

Ingredients:

For the Chicken:

  • 1 boneless, skinless chicken breast
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp lemon juice

 

For the Bowl:

  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup yellow cherry tomatoes, halved
  • 1/2 avocado, sliced
  • 1 cup mixed greens or spinach
  • 1 tsp sesame seeds (optional)

For the Dressing:

  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Directions:

1️⃣ Grill the Chicken:

Rub chicken breast with olive oil, paprika, garlic powder, salt, and black pepper.

Heat a grill pan over medium heat and cook chicken for 6-7 minutes per side, until fully cooked.

Let rest for 5 minutes, then slice.

 

2️⃣ Prepare the Salad Base:

Arrange mixed greens in a bowl.

 

3️⃣ Add the Toppings:

Top with sliced grilled chicken, cherry tomatoes, avocado slices, and sesame seeds.

 

4️⃣ Drizzle & Serve:

Whisk together olive oil, lemon juice, salt, and pepper for the dressing. Drizzle over the bowl and enjoy!
