Grilled Chicken
⭐ Ingredients
- 1 large chicken breast (boneless, skinless)
- 1 tbsp olive oil
- Salt & black pepper
- ½ tsp paprika or chili flakes (optional)
- ½ cup dry couscous
- ½ cup hot water or broth
- 1 ripe avocado (sliced)
- 1 cup cherry tomatoes (halved)
- 2 cups fresh greens (lettuce, spinach, or mix)
- Lemon wedges (optional)
Instructions
1️⃣ Cook the Couscous
Place dry couscous in a bowl.
Pour hot water or broth over it (1:1 ratio).
Cover and let sit 5 minutes.
Fluff with a fork.
2️⃣ Prepare the Chicken
Rub chicken with olive oil, salt, pepper, and paprika/chili flakes if using.
Grill or pan-cook over medium heat ~6–7 min per side until cooked through.
Rest 5 min, then slice.
3️⃣ Assemble the Bowl
Place greens at the base of a bowl.
Add fluffed couscous.
Arrange sliced chicken, avocado slices, and cherry tomato halves on top.
4️⃣ Optional Finish
Squeeze fresh lemon over the bowl.
Drizzle with extra olive oil or your favorite dressing if desired.
