Green Chile Quinoa Salad
Zesty Green Chile Quinoa Salad with Fresh Veggies and Lime Dressing
Ingredients:
1 cup quinoa, rinsed
2 cups water
1 cup roasted green chiles, chopped (mild or hot, to taste)
1 cup cherry tomatoes, halved
1 cup corn kernels (fresh, canned, or grilled)
1/2 cup red bell pepper, diced
1/4 cup fresh cilantro, chopped
2 tablespoons olive oil
2 tablespoons fresh lime juice
1 clove garlic, minced
1 teaspoon ground cumin
Salt and black pepper, to taste
Directions:
In a medium saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and let cool slightly.
In a large mixing bowl, combine quinoa, roasted green chiles, cherry tomatoes, corn, bell pepper, and cilantro.
In a small bowl, whisk together olive oil, lime juice, garlic, cumin, salt, and pepper.
Pour the dressing over the salad and toss well to combine.
Chill for at least 30 minutes before serving to let the flavors meld.
Serve cold or at room temperature as a main dish or side.
