Ingredients:

1 1/2 cups grated zucchini (about 2 medium)

2 large eggs

1/2 cup plain Greek yogurt

1/3 cup honey or maple syrup

1/4 cup Olive oil or melted coconut oil

1 teaspoon vanilla extract

1 1/2 cups whole wheat flour (or all-purpose flour)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or chocolate chips (optional)

Steps:

1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

2. In a large bowl, whisk together eggs, Greek yogurt, honey, oil, and vanilla extract until smooth.

3. Stir in the grated zucchini.

4. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

5. Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.

6. Fold in walnuts or chocolate chips if desired.
