Greek Orzo Salad – Mediterranean Diet Recipe
Ingredients:
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ¼ cup red onion, finely chopped
- ¼ cup Kalamata olives, sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar (or lemon juice)
- 1 tsp dried oregano
- Salt and pepper to taste
- Optional: ¼ cup crumbled feta cheese, fresh parsley for garnish
Instructions:
Cook orzo according to package instructions. Drain and rinse under cold water to cool.
In a large bowl, combine orzo, cherry tomatoes, cucumber, red onion, and olives.
In a small bowl, whisk olive oil, vinegar or lemon juice, oregano, salt, and pepper.
Pour dressing over salad and toss to coat evenly.
Top with feta and parsley if desired. Chill before serving.
