Mediterranean Grilled Delight

Ingredients:

For the Marinade:

  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

For the Kebabs:

  • 1 1/2 pounds chicken breast, cut into 1-inch pieces
  • 1 large red onion, cut into chunks
  • 2 bell peppers (any color), cut into chunks
  • 1 zucchini, sliced into rounds (optional)
  • 1 yellow squash, sliced into rounds (optional)

Directions:

Prepare the Marinade: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.

Marinate the Chicken: Add the chicken pieces to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
