Greek Couscous Salad

Ingredients:
- 1 cup couscous
- 1 1/4 cups vegetable broth or water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup crumbled feta cheese
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Directions:
In a medium saucepan, bring the vegetable broth or water to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
In a large mixing bowl, combine the cooked couscous, cherry tomatoes, diced cucumber, Kalamata olives, chopped red onion, and chopped parsley.
In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper.
Pour the dressing over the couscous mixture and toss gently to combine.
