Greek Chicken Rice Bowl with Tzatziki
Ingredients:
For the Chicken:
2 chicken breasts
2 tbsp olive oil
1 tbsp lemon juice
2 cloves garlic (minced)
1 tsp paprika
1 tsp dried oregano
Salt & pepper to taste
For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber (grated and drained)
1 tbsp lemon juice
1 clove garlic (minced)
1 tbsp fresh dill (chopped)
Salt & pepper to taste
For the Bowl:
2 cups cooked basmati rice
1/2 cup cherry tomatoes (halved)
1/2 cucumber (sliced)
Lemon slices for garnish
Fresh dill for topping
Instructions:
Marinate Chicken: Mix olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper. Coat chicken and marinate for 30 minutes.
Cook Chicken: Grill or pan-sear chicken until golden and cooked through. Slice into strips.
Prepare Tzatziki: Mix all sauce ingredients and chill for 10–15 minutes.
Assemble: Place rice in a bowl, top with chicken, cucumber, tomatoes, and tzatziki sauce.
Garnish with fresh dill and lemon slices.
