Ingredients:
- 8 chicken thighs (1200g/2.65 lbs)
- Salt, black pepper, oregano (to taste)
- Olive oil
- Butter (15g/0.5 oz)
For the Glaze:
- 3 tablespoons honey
- 4 tablespoons sweet chili sauce
- 3 tablespoons soy sauce
- Juice of 1/2 lemon
- 1 tablespoon Dijon mustard
Sides:
- 1 onion (120g/4.2 oz)
- 4 carrots (200g/7 oz)
- 6 potatoes (700g/1.5 lbs)
- Salt and black pepper (to taste)
- 3 cloves of garlic
- A bunch of parsley
Instructions:
- Season chicken thighs with salt, black pepper, and oregano.
- Heat olive oil and butter in a pan, sear chicken until golden.
- In a bowl, mix honey, sweet chili sauce, soy sauce, lemon juice, and Dijon mustard. Pour over chicken.
- Bake at 350°F (175°C) for 25-30 mins.
Serve with roasted veggies:
- Toss onion, carrots, and potatoes with olive oil, salt, black pepper, garlic, and parsley.
- Roast at 400°F (200°C) for 25-30 mins.
