Golden Potato Patties

Ingredients:
2 cups cold, leftover mashed potatoes
1 large egg
⅓ cup grated yellow onion
½ cup all-purpose flour
¾ teaspoon Kosher salt
¼ teaspoon black pepper
About 1 ½ cup canola oil for frying
Directions:
In a large mixing bowl, combine the mashed potatoes and the egg, mixing until the egg is thoroughly incorporated.
Mix in the grated onion, flour, salt, and pepper using a fork until everything is just combined.
Heat the oil in a large fry pan over medium heat until it reaches approximately 350°F.
Scoop scant ½ cup portions of the potato mixture and gently drop them into the hot oil. Flatten slightly with a spatula to form patties.
Fry each patty for about 2 ½ to 3 minutes on one side until golden brown, then flip using a spatula and another utensil for ease and fry for another 2 to 2 ½ minutes.
Transfer the patties to a cooling rack over paper towels. Let cool slightly before serving.
