Ingredients:

  • 2 eggs
  • 3 tablespoons of margarine or butter
  • 1 cup of sugar
  • 2 cups of cornmeal
  • 1 tablespoon of baking powder (Royal type)
  • 1 cup of grated cheese
  • Sweet cassava flour until it can be rolled (approximately 2 and a half cups)

Preparation method:

Start by beating the eggs in a bowl. If desired, remove the skin from the yolk to avoid the strong odor.

Add the sugar and mix well with a whisk. Add the margarine (or butter) and mix until combined.

Suggestion: If you prefer, you can add other flavors to the dough, such as vanilla , anise, orange or lemon zest, or even make lactose-free versions without cheese.

Then add the cornmeal and continue mixing. The batter will start to thicken.

Replace the whisk with a wooden spoon, as the dough starts to get heavier. Add the grated cheese and mix again. Add the yeast and mix well.

Gradually add the tapioca flour, stirring until a smooth, consistent dough forms.

When the dough is well mixed, it should be firm, like cookie dough.

Shape the balls with your hands or use a spoon to take portions of dough.
