Giant Muffuletta Sandwich (Quick Version)

 

Serves: 4–6

Prep: 20 min (+1 hr chill/press)

Olive Salad:

  • 1 cup green olives, 1 cup black olives (chopped)
  • ½ cup roasted red peppers
  • ¼ cup pickled giardiniera
  • 2 garlic cloves (minced)
  • ¼ cup olive oil
  • 1 tsp oregano, 1 tsp basil
  • Salt & pepper
  • Mix all together. Chill 1 hr (or overnight).

 

Sandwich Build

1 large round loaf (Italian or French)

¼ lb each: salami, mortadella, chicken ham

¼ lb each: provolone, mozzarella

1. Slice bread. Scoop some inside if thick.

2. Spread half olive salad on bottom.

3. Layer meats & cheeses.

4. Spread rest of olive salad on top bread.

5. Wrap sandwich tightly. Press with heavy pan for 30–60 min.

6. Slice into wedges. Serve at room temp.
