Garlic Parmesan Chicken with Roasted Broccoli:
Ingredients:
4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese, divided
2 tbsp olive oil, divided
4 cloves garlic, minced, divided
1 tsp Italian seasoning
1/2 tsp paprika
1/2 tsp salt, plus more to taste
1/4 tsp black pepper
Zucchini noodles or Shirataki noodles (as pasta substitute)
4 cups broccoli florets
2 tbsp butter
1 cup heavy cream
1/2 cup chicken broth
1/4 cup fresh parsley, chopped
1 tsp lemon zest
1 tbsp lemon juice
Red pepper flakes (optional)
Instructions:
Preheat the oven to 425°F (220°C).
Coat the chicken breasts with the Parmesan mixture and roast as instructed.
Toss the broccoli with olive oil and season with salt and pepper, then roast it as per the original recipe.
Instead of penne, cook your zoodles or Shirataki noodles according to the package instructions.
Prepare the creamy garlic sauce as per the original recipe (skip pasta).
Toss the zoodles or Shirataki noodles with the roasted broccoli and sauce.
Top with the sliced chicken breasts and garnish with parsley, red pepper flakes, and lemon juice.
