Garlic & Herb Cottage Cheese Flatbread 
– Low-Carb, Crispy & Dippable


This crispy, golden flatbread is made with cottage cheese for a protein boost and flavored with garlic + herbs. Perfect as a side, pizza base, or for dipping into hummus, tzatziki, or marinara!
Ingredients (makes 2 medium flatbreads):
1 cup cottage cheese (blended smooth)
2 large eggs
½ cup almond flour (or oat flour for softer texture)
½ tsp baking powder
1 tsp garlic powder
1 tsp dried Italian herbs (oregano, basil, thyme)
¼ tsp salt
Optional: olive oil spray for brushing

Directions:
Step 1: Prep Batter
Blend cottage cheese until smooth. In a bowl, whisk with eggs, almond flour, baking powder, garlic, herbs, and salt until thick and spreadable.
Step 2: Shape Flatbread
Line a baking sheet with parchment paper. Spread batter into 2 oval/round flatbreads, about ¼-inch thick.
Step 3: Bake
Bake at 375°F (190°C) for 15–18 minutes, until golden and edges crisp.
Step 4: Serve
Brush lightly with olive oil (optional) and cut into slices. Serve warm with your favorite dips or toppings!

Use as a base for quick mini pizzas
