Ingredients
- 2 pounds beef strip steak (1-inch thick), cut into 1-inch pieces
- 2 teaspoons kosher salt, divided
- 1 teaspoon black pepper, divided
- 2 tablespoons vegetable oil
- 5 medium garlic cloves, finely chopped (about 3 tablespoons)
- 4 tablespoons unsalted butter, cubed
- 2 teaspoons Worcestershire sauce
- 1 tablespoon finely chopped fresh flat-leaf parsley
Instructions
- Prep the Steak: Sprinkle the steak pieces evenly with 1 1/2 teaspoons of salt and 1/2 teaspoon of pepper.
- Cook the Steak: Heat a large skillet over medium-high heat. Add the vegetable oil and heat until shimmering. Place half of the steak pieces in the skillet, ensuring they are not overcrowded. Cook for about 1 minute without moving the steak until the bottoms are browned and crispy. Flip the pieces and cook for another minute. Continue flipping and turning the steak until it is browned on most sides and cooked to medium-rare (about 1–2 more minutes). Transfer the cooked steak to a large bowl. Repeat the process with the remaining steak pieces and set aside. Do not clean the skillet.
- Prepare the Garlic Butter Sauce: Reduce the skillet heat to medium. Add the chopped garlic and sauté, stirring constantly, for about 30 seconds or until golden brown.
- Deglaze the Skillet: Pour in the Worcestershire sauce and scrape up any browned bits from the bottom of the skillet.
- Make the Butter Sauce: Cook for about 1 minute, stirring occasionally, until the liquid reduces to about 3 tablespoons. Remove from heat and add the butter, stirring until it melts and forms a creamy sauce.
- Combine and Serve: Add the remaining 1/2 teaspoon of salt and pepper to the sauce. Pour the garlic-butter mixture over the steak in the bowl and toss gently to coat. Transfer the steak and sauce to a platter and sprinkle with freshly chopped parsley. Serve hot.
