Garlic and Parmesan Chicken Skewers
Ingredients (for 4 skewers):
2 chicken fillets (about 400 g), cubed
2 tbsp olive oil
2 garlic cloves, minced
4 tbsp grated Parmesan cheese
1 tsp sweet paprika
1/2 tsp dried Italian herbs or thyme
Salt and pepper
Fresh parsley (for garnish)
Skewers (wooden or metal)
Preparation:
Prepare the marinade:
In a bowl, combine the olive oil, garlic, paprika, Italian herbs, salt, and pepper.
Add the chicken cubes and toss to coat. Marinate for at least 30 minutes (or up to 2 hours for more flavor).
Assemble the skewers: Thread the chicken pieces onto the skewers.
Lightly roll them in the grated Parmesan cheese, pressing down to ensure the cheese adheres well.
Preheat the air fryer to 200°C (390°F) for 3 minutes.
Place the skewers in the air fryer basket without overlapping. Cook for 10 to 12 minutes, turning halfway through. The chicken should be golden brown and cooked through.
To serve:
Sprinkle with chopped fresh parsley.
Serve with a yogurt, lemon, and garlic sauce or ranch dip.
Tips:
Soak the wooden skewers in water for 30 minutes before use to prevent them from burning.
You can add a few diced zucchini or bell peppers between the chicken pieces for extra freshness
