Fresh Shrimp Salad Recipe
Ingredients:
- 1 lb cooked shrimp (peeled & deveined)
- ½ cup celery, finely chopped
- ½ cup red bell pepper, finely chopped
- ¼ cup green onions, chopped
- 2 tbsp fresh dill, chopped
- ⅓ cup light mayonnaise (or Greek yogurt for lighter version)
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt & pepper, to taste
Instructions:
If shrimp isn’t cooked, boil or steam until pink (about 2–3 minutes), then cool.
Chop shrimp into bite-sized pieces (or leave whole if preferred).
In a large bowl, combine shrimp, celery, bell pepper, green onion, and dill.
In a small bowl, whisk together mayonnaise, lemon juice, Dijon, salt, and pepper.
Pour dressing over shrimp mixture and toss gently to coat.
Chill for at least 30 minutes before serving for best flavor.
