Fresh Corn Salad

 

Ingredients:

 

3–4 ears fresh corn (kernels removed)

2 medium tomatoes (diced)

1 small red onion (finely chopped)

Fresh basil leaves (chopped or whole for garnish)

1–2 tbsp olive oil

1 tbsp lemon juice or vinegar

Salt and pepper to taste

Instructions:

 

1. Boil or steam the corn kernels for 2–3 minutes, then let them cool.

 

2. In a large bowl, combine the corn, chopped tomatoes, and onion.

 

3. Add olive oil, lemon juice, salt, and pepper.

 

4. Toss everything together.

 

5. Garnish with fresh basil and serve chilled or at room temperature.
