Fluffy Vanilla Cupcakes ✨

These light, moist, and perfectly sweet vanilla cupcakes are a classic treat—easy to make and perfect for any occasion!


Ingredients (Makes 12 cupcakes)

  • 1½ cups all-purpose flour

  • 1½ tsp baking powder

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs, room temperature

  • 2 tsp vanilla extract

  • ½ cup whole milk, room temperature

(Optional: 1 tsp lemon zest for brightness!)


Instructions

1. Prep & Preheat:

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

2. Mix Dry Ingredients:

  • In a bowl, whisk flour, baking powder, and salt.

3. Cream Butter & Sugar:

  • Beat butter and sugar until light and fluffy (~3 mins).

  • Add eggs one at a time, then mix in vanilla.

4. Combine Wet & Dry:

  • Alternate adding dry ingredients and milk (start and end with flour). Mix until just combined (don’t overmix).

5. Bake:

  • Fill liners ⅔ full. Bake 18-20 mins until a toothpick comes out clean.

  • Cool in pan 5 mins, then transfer to a rack.


 Pro Tips:

  • Fluffier cupcakes? Substitute ½ cup milk with ½ cup buttermilk.

  • No dome? Bake at 325°F (160°C) for 5 mins, then increase to 350°F.

  • Flavor twist: Add ½ tsp almond extract or fold in fresh berries.
