Instructions
- Whisk Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- Combine Wet Ingredients: In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
- Combine Wet and Dry: Pour the wet ingredients into the bowl with the dry ingredients. Whisk until just combined. The batter should still be lumpy—do not overmix, as this develops gluten and results in flat, tough pancakes. A few lumps are fine!
- Heat the Griddle/Skillet: Heat a large non-stick skillet or griddle over medium heat. If you use a very hot setting, the outside will burn before the inside cooks through. Lightly grease the pan with a little butter or oil (wiping off any excess with a paper towel for even berownin).
- Cook the Pancakes: Pour cup of batter onto the hot griddle for each pancake, leaving space between them.
